Bon Cap Private Cellar Cape Blend 2006

From our premium selected vineyards, this wine was aged in 100% new French oak for 18 months and further bottle aged until now.  It displays both the individuality of each cultivar and the harmony brought by blending and ageing. Black berry fruit and earthy, savoury undertones with spice oak integration and a med full, very long satin structured palate makes this a complete and multidimensional wine.  To be enjoyed with venison and hearty red meat dishes.

6.  Harvest Details:     
The different cultivar components were handpicked at full phenolic ripeness. Crushed destemmed and fermented in open fermentation “kuipe”. Aerated remontage 3 times/day. Fermented dry on skins and then malo-lactic fermentation was done in 300l oak ( 100% New French oak).  Aged for 18 months were after it was given a rough filtration before bottling.
