in the vineyard : The vineyards (viticulturist:Henk van Graan)
The grapes were sourced from vineyards in the Durbanville and Darling areas. The vines, situated some 50m to 150m above sea level on slopes suiting the cultivar and planted between 1985 and 1995, are grown in decomposed granite. Grafted onto nematode-resistant rootstock Richter 99, R110 and 101-114, the vines are largely unirrigated, but receive supplementary irrigation by means of an overhead sprinkler system when necessary.

about the harvest: The grapes were harvested by hand at 18° to 19° Balling during mid-February.

in the cellar : The fruit was crushed and then cool-fermented in temperature-controlled stainless steel tanks for a period of two to three weeks at 13° C, before being left on the skins for one day to extract as much colour as possible.
