Bonaire Cabernet Sauvignon / Merlot 2009

This wine displays ripe aromas of blackcurrant, dark plums, red berries and hints of violets. These lively fruity characters are complemented with subtle cedar oak and dark chocolate undertones. On the palate this medium bodied wine exhibits a great balance of ripe fruit character with an elegant, structured and silky finish.

about the harvest: The grapes were harvested at optimum phenolic ripeness.
Yield: 12t/ha

in the cellar :  The components of this wine were harvested and vinified separately. After destemming,  the grapes were transferred to open fermenters and kept at 12 - 14°C for 3 - 5 days to ensure optimum colour and tannin extraction. During fermentation pigeage was done every 4 hours before pressing the wine at 5°Balling. Fermentation was finished in tank, before racking the wine to French Oak barriques where MLF was completed spontaneously and maturation was completed after 12 months.
