Upfront notes of mulberry and plum evolve to hints of mint and leather. A soft, juicy midpalate is well supported by the firm oak tannin structure and long, mineral finish.

in the cellar :

Both varieties were destemmed only. Merlot and Cabernet Sauvignon were fermented separately in open top stainless steel fermenters.
Whole berries were fermented at 26° - 28° C with commercial yeast strains suited for the varieties.
Wines were allowed to ferment to near dryness and removed from skins in order to retain softness and minimise skin tannin extraction.
Both wines underwent MLF and 10 months of ageing in second and third fill barrels to ensure the accent is on the fruit expression.
The wine was then blended and lightly filtered shortly before bottling.
