Vansha Dry Red 2009

Upfront notes of mulberry and plum evolve to hints of mint and leather. A soft, juicy midpalate is well supported by the firm oak tannin structure and long, mineral finish.

in the cellar : 
  • Both varieties were destemmed only. Merlot and Cabernet Sauvignon were fermented separately in open top stainless steel fermenters.
  • Whole berries were fermented at 26° - 28° C with commercial yeast strains suited for the varieties.
  • Wines were allowed to ferment to near dryness and removed from skins in order to retain softness and minimise skin tannin extraction.
  • Both wines underwent MLF and 10 months of ageing in second and third fill barrels to ensure the accent is on the fruit expression.
  • The wine was then blended and lightly filtered shortly before bottling.
