in the cellar : The only small barrels fermented Pinot Noir produced according to the ancient French method. The must is fermented in open small oak barrels, with one head removed. At pressing, the head is put back in place, and the wine is underdoing malo in the same barrel. The result is a great complexity of the middle palate, with a great protection of the fruit.
