Palate: Rich with notes of chocolate and a cedar wood finish.

in the vineyard : Selective grape selection from the Darling, Swartland and Franschhoek regions.

in the cellar : 40% of wine was matured in 225-litre European oak barrels for 12 months. Balance of the wine was oak staved for 6 months with added micro oxygenation.

Standard fermentation with selective yeast accompanied by pumpovers and punch downs at optimum temperatures. Extended skin maceration, pressed and post-fermentation malolactic.
