in the cellar : Grapes were destemmed, crushed and settled as cold as possible prior to fermentation. 40% was fermented in 2nd fill French oak barrels at 15 to 16Â°C and 60% was fermented in stainless steel tanks. The 60% is currently moved to 3rd fill French oak barrels and is presently on the lees.
