Green apple white pear and honey on the nose. Hints of quince, green guava and a flintiness adds complexity to the wine. A full rounded mouth feel with apple and pear on the palate is backed by a crisp acidity and lingering mouth feel.

in the vineyard : The grapes originate from 27 year old vines which produce concentrated cool climate grapes. The vineyard is exposed to the cooling SE sea breezes from Walker Bay, and has a sandy loam topsoil with well-structured clay sub-soil, which reduces water stress during the growth season.

about the harvest: The grapes were hand harvested at: 1st pick - 21° Balling; 2nd pick - 24° Balling.

in the cellar : The grapes were hand selected prior to being subjected to a gentle press. The juice was chilled and racked after 2 days. Fermentation temperature was kept at 12° C. The fermentation was completed after 18 days and the wine left on the lees for 2 months before raking.
