in the vineyard : Grapes were sourced from 3 “estate-grown” vineyards. These vineyards are farmed according to “organic” principles.

(1) 20 year old, South-facing, Chenin Blanc vineyard planted in deep clay-based soils.
(2) 27 year old, bushvine, Chenin Blanc vineyard.
(3) 9 year old Viognier vineyard, planted in rocky granitic soil.

about the harvest: Grapes were hand-picked.

in the cellar : Grapes were gently pressed and the resulting juice was fermented in barrels using “wild yeasts”. The resulting wine was left on the lees for 10 months before being blended and then bottled.
