in the vineyard : A lot of attention is paid to detail in the vineyards regarding canopy management.

about the harvest: Harvested from mature and trellised vines at a ripeness of 22°B. Harvesting was done early in the morning by hand followed by rigorous sorting.

in the cellar : Selected batches of Shiraz and Cabernet Sauvignon (50:50) were drained and co-fermented with St George yeast. Kept on gross lees in tank for three months and stirred regularly. Partially completed malo-lactic fermentation. 20% Matured in old wood.
