about the harvest: The grapes are picked ripe to enhance the fruit flavours. The Sauvignon blanc is picked from spesific areas inside the vineyard. The Chenin blanc is picked from newly trelished vines.

in the cellar : The Sauvignon blanc was treated reductively to the tank where it was cold fermented with a combination of yeasts. The Chenin blanc was treated non-reductively and were cold fermented with a suitable yeast. Both the Chenin blanc and Sauvignon blanc was left on the yeast lease for a few months before it was blended together.
