in the vineyard : Grapes are sourced from old (Â± 30 years) and low bearing (7 tons/ha) bush vines to ensure complex, well-structured fruit. The must is fermented on skins for Â± 3 days when the juice is drawn off at 10Â°Balling. Maturation takes place in third fill French oak barrels for 12 months.
