in the cellar : Juice drawn off from the must (method known as “saignee”) of the three cultivars are cold-fermented in stainless steel and blended before bottling. With this method we attain a pink wine with lots of fruit and a balanced acidity. The Syrah lends a spicy aromatic character to the wine and the Cinsaut and Grenache offer juicy fruit.
