Fortress Hill Shiraz 2007

Dark garnet in colour, with rich almond, cherry and a whiff of marzipan and peppers. Perfectly balanced with soft woody aromas for a good long finish, and an interesting food companion.

in the vineyard : The grapes came from old vineyards planted in 1978, and new vineyards of selected clones planted in 1998 in clovelly soil. The vineyards are trellised and face North West.

about the harvest: Grapes were handpicked and harvested between 24.5 and 25.5° balling.

in the cellar : After cold soaking of 24 hours the mash were inoculated and fermented to 6° balling when it was pressed. The young wine was racked twice and then transferred to 3rd. 4th and 5th fill, ? American and ? French oak barrels of 300l and 225l capacity, where it was matured for 18 months.
