in the vineyard : Tinta Barocca from our Vredenhof farm in Stellenbosch, planted in 1971. An old bush vine vineyard with low yields (3-4 tons/ha) planted on granitic gravels with underlying layers of clay.

about the harvest: Handpicked at the end of March 2007. Harvested at optimum ripeness.

in the cellar : Fermented in open stainless steel tank with regular punch downs to ensure optimum extraction and purity of fruit. The fermenting juice was drawn off the skins at 11°B and fortified with brandy spirits to ensure a low extract for a drier finish on the palate. The wine was matured for 24 months in 3rd fill French oak barrels.
