about the harvest: The grapes were harvested as follows:
Pinot Noir and Pinot Meunier at ±19.8° Balling and the Pinotage at ±20° Balling
Yield: 10 - 15tons/ha
in the cellar : Vinification: Grapes are sorted in the vineyard and taken to the cellar. They then undergo whole bunch pressing. The first free-run juice is called the cuvee and this is used for making the Brut.
Maturation: Matured on lease for ±12 months depending on the degorging date.
