in the cellar : 100% Chardonnay grapes were in good condition and had a fair acid. Fermented at 14ºC with new NT112 yeast, left on the lees for 3 months, racked and left on American Oak staves for 3 months. Wood used to round wine off and not over dominant. Bottled 01 August 2000.
