in the cellar : Grapes for this Sauvignon Blanc were carefully selected from the Walker Bay ward. After improved de-stalking using our new de-stalker (called Spitnick), the juice was cooled and allowed to settle overnight. Pure yeast culture was added after drawing the juice off the settled sediment. Fermentation took place at an even pace at 14ÂºC. The wine was racked off the gross lees and bottled using sterile filtration on 2nd June 2000.
