about the harvest: Grapes were harvested at 22ºB.
in the cellar : Grapes were whole-bunch pressed to a low1.4 bar of pressure. Using two different types of yeast, fermentation occurred over a 14 day period. The wine spent four months on the gross lees before stabilisation, filtration and bottling.
