Bon Cap The Ruins Rose 2011

This is a very elegant Rose with a light salmon pink colour. It is off-dry wine with subtle fruit flavours of strawberry and frambois. The palate is nice and crisp which compliments light summer dishes very well. The wine must be served well chilled at 13?C

in the vineyard : From our younger Shiraz vineyards (<10 years old) with average 12ton/ha production
about the harvest: Made from 100% Shiraz. Early morning machine harvested at 21 º B, crushed and de-stemmed and cooled down to 10ºC in a stainless steel tank.
After 10 hours of cold skin maceration the free running juice was drawn off and settled to clarify before racking. A cold fermentation at 13 degrees centigrade was carried out to enhance the subtle fruit flavours of the wine. After fermentation the wine was clarified, stabilized and cold filtered, ready for bottling
