in the vineyard : Age of vineyards: 27 years
about the harvest: The grapes were picked at 38° Balling. Only botrytis infected bunches were handpicked.
in the cellar : The grapes had 24 hour skin contact. Free running juice and press must fermented in stainless steel tanks till 21°B and was then stopped via filtration. A second filtration was done 3 weeks later.
