Noble Hill is unique wines from estate vines, but every so often we are given the opportunity to work with high-quality fruit from off the estate. Just such an opportunity arose in 2011 when we were able to source a small quantity of Sauvignon Blanc from a vineyard just outside Villiersdorp in the Overberg at 700m altitude. With soils of decomposed granite, this south-east facing terrain is cool even in summer, causing the grapes to ripen as late as March. Grapes were harvested by hand into small crates and delivered to our winery in a refrigerated truck.
