about the harvest: A pre-harvest was done to remove all the grapes not up to standard, after which all grapes were hand harvested in the cool of the morning.

Harvest date: March 2011

in the cellar : Grapes received skin contact for 24 hours and only the free run juice was used. Juice settled over night and racked off clean before a long cold ferment. The wine stayed on the lees for a further 5 months, before bottling in August. Thereafter the wine spent 9 months in the bottle before release to gain richness and complexity. Only 1000 cases produced.
