Western Cape, specifically Breedekloof Valley and Paarl area.

Climate
Temperature: Winter 17°C; Summer 28°C
Annual rainfall: 200mm
Proximity to ocean: 100km

Soil
Well drained ancient riverbeds, alluvial soils and decomposed granite from mountain foothills.

Viticulture
70% of grapes sourced from the Breedekloof Valley and 30% of grapes sourced from Paarl. Trellised vines in the Breedekloof Valley received drip irrigation and produced 8 - 15 tons per hectare. Vineyards in Paarl region are trellised vines, 8 - 14 years; drip irrigated and yielded 8 - 10 tons per hectare. Warm weather allowed grapes to reach optimal ripeness.

about the harvest: Grapes were handpicked at optimal ripeness.

in the cellar : The grapes were sorted, de-stemmed and gently crushed. The juice was chilled to 10 - 12°C to enable cold maceration prior to fermentation in stainless steel tanks for 2-3 days. Daily pump-overs were carried out during fermentation to extract further colour and flavour. Wines showing well preserved fruit were chosen for blending and fining. Grapes from Paarl provided a good tannin structure and dark berry flavours and the grapes from Breedekloof added a full bodied and ripe fruit contribution to the blend. Sterile bottling took place after 6 months of maturation and subtle oak integration.
