The grapes are grown in ancient weathered granite soils in small 5 year old vineyards where modest yields of between 7 - 9 tons per hectare produce great fruit, minerality and natural acidity typical of their Agter-Paarl pedigree.

about the harvest: Harvested by hand at optimal ripeness.

in the cellar : Softly pressed in whole bunches with reverence to the delicate skins of this variety. Cold fermentation in tanks preserves the inherent traits and fruit expressions. A small portion (15%) is fermented in second and third fill French oak barrels for three months to further enhance complexity and dimension.
