about the harvest: Harvesting took place on 25 March 2009. Only selected, hand-picked grapes at 25.7° Balling were used.

Yield: 10 tons per hectare

in the cellar : Fermentation occurred in small open fermentation tanks with a capacity of 1 - 10 tons. Manual punch down every 3 hours for 8 days was followed by extended skin contact for 5 days. Malolactic fermentation followed in barrel over a two week period. The wine was aged for 30 months in 225 litre new French and Romanian cooperage of which 33% was Sylvain, 15% TW Boswell and the remainder Demptos, Radoux, Damy andVallach, producing an exclusive vintage of only 63 barrels.
