Bosman Cabernet Sauvignon 2007

Deep berry red with a purple rim. On the nose, the has elegant raspberry, blackberry andconcentrated plum aromas. Slight pencil shaving notes. Beautiful mouth feel with a long fruitcrammed, persistent finish.

Pair with lamb casseroles, hearty stews or as a conversation point in front of a winter's fireplace.

in the vineyard : Some of the components are from vineyards planted on deep red shale soils, the others planted on decomposed granite. This gives us a wonderful blend of rich succulent fruit characters and minerality in our wines.

in the cellar : Cold soaking before fermentation for two days followed by fermentation at relatively low temperatures. Punch-downs and pumpovers utilized for colour extraction. 18 months maturation in small French oak barrels.
