in the cellar : This is a dry white blend of equal parts Sauvignon Blanc, Chardonnay, Chenin Blanc and Riesling. Each component was fermented separately in stainless steel tanks at low temperatures, save for a small amount of Riesling that was barrel fermented in American Oak to achieve a touch of dusty vanilla. After fermentation the wines were blended together with lees and allowed to mature on the lees to build backbone and longevity. The objective with this wine is to make a great everyday white thatâ€™s easily quaffable on its own, but with the structure to enjoy with food.
