in the vineyard : Deep, well-drained Hutton and Clovelly soils, planted on west-facing slopes on 5-wire Perold system trellising.

about the harvest: Harvested at full ripeness (24.5° - 25° Balling).
Harvest Date: March 2009

in the cellar : Destemmed and then cold-soaked for 3 days. Innoculated with yeast and pumped over regularly. Left on skins for 5 days after fermentation. Malolatic fermentation in the tank. Aged for 18 months in 100% New French Oak.
