in the cellar : Chardonnay is made from juice extracted in bag presses with minimum pressure, in order to maximise purity. The juice is allowed to ferment dry under temperature controlled conditions, and is left on the lees until the wine is prepared for bottling, to extract maximum flavour. Having been oak matured, the result is a well balanced wine with complexity.
