To achieve the classic Pinot Grigio characteristics, we source grapes from many small blocks with micro-climates that are perfectly suited to the variety, one of them being our Altima property, some from Franschhoek and also from Groenekloof area.

in the cellar : Produced from handpicked grapes and pressed immediately to avoid any colour extraction from the blue/grey grape. A slow fermentation proceeds, to allow time for the true potential of the Pinot Grigio grape to be unveiled. It is the kept on the fine lees for about 6 months then bottled.
