White stone fruit aromas are predominant early upon opening. These subside as the typical honeyed Chenin aromas push through once the bottle has been open a while. It has a strong core of natural acidity which will allow the wine to age beautifully. This is tempered by a soothing, slightly waxy texture. A blend of Chardonnay, Chenin Blanc, Clairette Blanche and Viognier.

in the vineyard : The vines are farmed organically and dryland, thus not irrigated. The Chenin vines are between 45 & 50 years of age and the vineyard lies on a big bank of hard granite rock which naturally stresses the vines. The Viognier and Chardonnay used are from older blocks on the farm planted in 1984. The Clairette Blanche is 15 years old. There is no specific recipe that we use; each vineyard block is treated according to its strengths and weaknesses.

about the harvest: 2011 was challenging in the fact that we had intense heat early on in January which created small berries that were packed with concentration although not in the volume we were looking for. Nevertheless, flavour and acidity were intensified which is evident in the wine.

in the cellar : pneumatic bag press. All the grapes were pressed whole bunch with no or little rotation of the press to ensure only the best juice is separated and kept. The juice was pressed directly into 300L & 600L old French casks where the juice was fermented and aged for 12 months on its gross lees. The barrels were then blended and placed in a 9500L concrete tank where it aged for another 5 months on its fine lees before being bottled unfined and unfiltered.
