in the vineyard : The grapes are sourced from our cool Darling vineyards. The grapes are from dryland, bushvines on oakleaf soils, the site is 7km from the Atlantic ocean. A small portion of Barbera grown on the slopes of Paarl mountain on Fairview farm was included in this wine. The Barbera is from trellised vineyards on decomposed granite.

in the cellar : Grapes were destalked and whole berry fermented in stainless steel tanks. After fermentation the wine was matured in older French and American barrels for 10 months prior to blending and bottling.
