in the vineyard : The grapes for this wine comes solely from bush vines on Hoopenburg’s 35 ha farm.

about the harvest: The grapes were harvested at 24° balling to capture the natural fruit of this variety.

in the cellar : Alcoholic and malolactic fermentation was done in stainless steel tank. Alternative wood products were used to provide the wanted structure in this wine, while still respecting the fruit. A minimal filtration was done before bottling.
