Lismore Syrah 2011

A smooth and silky, medium bodied wine with savoury hints of white pepper, anise, tobacco and leather can be found on the nose. Blackberry, currants and cherry with a distinctive minerality on the palate. It is soft and delicious.

The medium bodied, silky character of this wine pairs well with many dishes as it is never an overpowering companion. Serve with rare fillet, smokey dishes and medium weight meats like ostrich or game. To experience the best this wine has to offer, decanting is suggested.

The 2011 vintage was a mild, healthy growing season. The wines show a very distinctive linear, mineral character with clear fresh acidty. The Syrah from this vintage expresses a very specific time and place with its bright fuit and crisp acid structure.

about the harvest: The grapes were picked at optimal ripeness.

in the cellar : The grapes were destemmed, cold soaked for 3 days and whole-berry fermented in large open vats. The process allowed for a long extraction period which lends to the fruit expression of this wine. The free run wine was drained off and the fermented grapes were then pressed in a traditional wooden basket press. The wine was racked into 3rdnd fill French 300 litre barrels where malolactic fermentation took place and aged for 18 months.
