in the vineyard : Temperate climate with limited Irrigation, mainly dry land and bush vine vineyards. Pinotage grapes which are full ripe with sugars above 25˚B are selected.

Fermentation : Time, Temp and Method
Grapes are thermo-vinified and pressed immediately afterwards. Cooled, fortified and stored in stainless steel tanks.

Post Blending : Treatment
Kept in stainless steel tanks for at least 6 months to allow the alcohol and Pinotage to marry.
