in the cellar : Grapes were de-stemmed and lightly crushed to release juice. Spontaneous fermentation turns the juice into wine, while beautiful colour is extracted by punching down the cap of skins. Halfway through fermentation the skins are pressed and the wine completes fermentation in barrel and tank and left to age for 8 months, followed by bottling. Every process is done with as little intervention as possible and as naturally as possible in the Scali winery.
