in the vineyard : From two vineyards situated on a south-westerly slope in the Muldersvlei bowl, 21-year-old bush vines.

about the harvest: The grapes were handpicked.

in the cellar : 

The handpicked grapes were fermented in roto-tanks and upright fermentors with the aid of selected yeast strains. Temperature was maintained at 25-30°C. The wine was racked and returned once a day, followed by three pump-overs per day, and then matured for twenty-one months in French oak barrels (100% new).
