in the cellar : Sauvignon Blanc is a single cultivar wine, made from grapes harvested at optimum ripeness in the Paarl wine region of South Africa. Being a shy bearer, this variety produces low yields which results in good fruit concentration. After being pressed and fermented, the vinification process is completed. The wine is then filtered and stabilised, after which it is bottled. The result is a dry white wine, dominated by fruit flavours, with a slight grassy character typical of the variety.
