in the cellar : Tygerberg Blanc de blanc is unique in the Altydgedacht range, since it was produced by co-fermenting 6 different white wine varietals. The mother tank was inoculated with VIN 13, and as the different varieties ripened, the tank was fed with the sweet press fractions of the various cultivars. The resulting fermentation lasted almost 6 weeks. The wine definitely benefited from the integration afforded by co-fermentation.
