in the vineyard : Vineyards: Grapes were sourced from select vineyard sites in Robertson (51%), Paarl (20%), Worcester (17%) and Stellenbosch (12%), characterized mainly by calcareous red Karoo clay and decomposed granite soils. Vines range in age from 6 - 18 years. Approximately 20% of the vines were dry farmed, low-yielding bush vines. Grapes from the cooler coastal regions bring a zesty citrus and herbal character, while warm climate fruit imparts a tropical fruit profile and a fuller texture.
Vintage: A cool winter led to a moderate to hot growing season, resulting in a slightly later harvest than usual. Berry size was smaller than normal, translating to wines with a lovely fruit intensity. The wines achieved full phenolic ripeness while retaining a fresh, bright acidity.
in the cellar : The grapes were crushed and gently pressed. After the juice was chilled and settled, it was cold fermented in stainless steel tanks. Approximately 20% of the wine was aged on its lees for three months before blending and bottling.
