in the vineyard : A lot of attention is paid to detail in the vineyards regarding canopy management and irrigation scheduling.

about the harvest: Green harvesting was practiced as well as pre-harvest sorting in the vineyards. Harvested from mature and trellised vines at a ripeness of 25°B. Harvesting was done early in the morning by hand, followed by rigorous berry sorting.

in the cellar : After three days cold soak, wine was fermented dry on the skins with St Georges and NT112 yeast strains. Free-run and press wine was kept separate in small French and American oak barrels, 50% new, for malolactic fermentation and ageing. Batch blending was done after ten months and the blends returned to barrel for an additional two months.
