AWARDS

ageing : It will need time, so probably best drunk from 2015 onwards and hopefully for many years after. So far we have no other vintage in the pipeline, and it will never be one of our core bottling’s.

in the vineyard : The small Cabernet franc vineyard on Devon Crest was replanted in 2003, and is still quite young. It has a tendency to want to bear too heavily and green harvesting as well as crop reduction are essential.

in the cellar :  Though we always pick based on the taste of the grapes, in the case of Cabernet franc we try to wait as long as possible to avoid the peppery green olive characteristics. Spontaneous fermentation with gentle punch downs in an open fermenter. Matured 24 months in second fill French Oak barrels. Only one 225l barrel bottled, less than 50 x 6 cases.
