Like a gangster movie - “fall-off-your-chair powerful”, “big, lean and mean” and full of “leather”, “cigarbox”, and “smoky, spicy warmth”. “Fresh plums in the centre” balance the “white pepper”, “nutmeg” and “liquorice finish”.

ageing : Consistent firm tannin structure will work with the fruit to keep this wine fresh for a number of years to come, but well worth drinking now.
in the cellar : As is usual for us, we make this in a more Rhone style, emphasizing elegant spicy elements underpinned with good fruit. We stay away from the trendy heavy- (often American) wooded approach and only use 2nd fill barrels. The full ripeness of the grapes at harvest is reflected in deep fruit and spice flavours. 100% open fermenter, cap punched through by hand every 4 hours. Fermentation at 30°C to enhance flavours and colour extraction.
