in the vineyard : These grapes were sourced from our vineyard of Viognier on the upper slope of Paarl mountain.
about the harvest: The grapes were harvested early in the morning.
in the cellar : The grapes were pressed, separating the juice from the skins. The juice was cold fermented in a tank for 3 weeks. The wine was left to mature on fine lees for 6 months before bottling.
