in the cellar :
Grapes were destemmed and crushed before skin maceration at 10 degrees celcius for 8 hours. The meceration extracted just the right amount of colour and good flavours. The grapes were then pressed and the juice clarified overnight before fermentaion for 10 day in a stainless steel tank. No malolactic fermentation and no oak maturation.
