Bellingham Ancient Earth Sauvignon Blanc 2015

Pale straw with a youthful green twinkle, and an overtly tropical fist impression with lively pineapple, pear and passion fruit aromas that lead to a fresh entry packed with Cape gooseberry and ripe fig flavours against a herbaceous hint that finishes with delectable feisty fruitiness.

Best served chilled as a refreshing aperitif or for enjoyment on its own. Delicious with spicy crab wontons, prosciutto and asparagus risotto or prawn, lime and chilli linguine.

2015 vintage produced exceptional quality Sauvignon Blanc. The long cool ripening period soft ripe allowed optimal fruit with good complexity, varietal character and balance.

about the harvest: Hand harvested between 22° and 23.5°B in early February.

in the cellar : Crushed and cold fermented at 16°C in stainless steel. Extended contact with the gross lees stirred up periodically adds richness and mouth feel. Final blending and bottling takes place at our cellar.
