in the vineyard : Bay View Bay Blanc is a blend of crisp, fruity wines such as Colombard, Chenin Blanc and Sauvignon Blanc from predominately Hutton and Clovelly soils of the Western Cape. These grapes combine beautifully to enhance each individual flavour.

about the harvest: Harvested in the last two weeks of February 1999 at 23,5ºB.

in the cellar : The juice of each cultivar was fermented separately in stainless steel tanks using local yeasts. Care was taken to prevent temperatures from rising too high in order to prevent loss of aromatic compounds. Skin contact was applied for 3-5 hours in order to extract more flavour compounds from the skins. Wine was blended and gently fined before bottling.
