Guardian Peak Cabernet Sauvignon/Syrah 2000

Intense ruby red. Rich aromas with an array of ripe cherry and blackberry, exotically spiced. Palate packed with these flavours – deeply concentrated. Almost explosively mouth filling, with a fine tannin finish.
As the lion represents a sense of being guardian, Guardian Peak watches over the fruitful vineyards of the Cape. Made by the people of the award-winning R&V wines, this refreshing wine can be enjoyed during unpretentious dining together with good company.

Mediterranean rainfall ± 650mm per annum. Vineyards situated on north facing slopes and at the end of the valley hence slightly warmer conditions.

SOIL
Deep red soils. A mixture of weathered granite and a small percentage of clay, Clovelly and Hutton structure.
in the cellar : Fermented in open top fermentation vats, pressed and left to mature in 300 L 2nd and 3rd fill French oak barriques for 10 months.
